Cranberry Orange Coffee Cake

Today I’m switching things up and sharing one of my favorite recipes with you! Cranberry Orange Coffee Cake. It’s simple, but quite delicious, and perfectly festive for the season. I hope you enjoy! 
CRANBERRY ORANGE COFFEE CAKE
• 1/4 cup butter, melted
• 1/2 cup of sugar
• 1 egg
• 1 tsp vanilla
• 1/3 cup of milk
• 1 cup of flour
• 1/2 cup rolled oats
• 1/4 tsp baking powder
• 1/4 tsp baking soda
• 1/4 tsp salt
• 2/3 cup of cranberries
• zest from one orange
• 1/4 cup brown sugar (for sprinkling on top)
Preheat oven to 350° F. In a large bowl, whisk together the butter, sugar, egg, vanilla, and milk. In another bowl, sift together the flour, baking powder, baking soda, salt, and oats. Add the dry mixture to the large bowl ingredients and stir until combined.  Fold in the cranberries and orange zest. Spray a bread pan (mine are 8″ X 4″) with nonstick spray and pour the batter inside, making the top as even as you can. Evenly sprinkle the brown sugar on top. Bake at 350° for 35-45 minutes, or until a toothpick inserted comes out evenly. Let cool completely before removing from pan and slicing. Enjoy!
